Chicken Fajita Bowls

This easy bowl full of Mexican flavors makes a delicious chicken and vegetable weeknight dinner. It comes together in less than an hour and combines bulgur with juicy chicken full of flavor from the spicy fajita marinade, hearty black beans, vegetables, and a refreshing yogurt dressing.   • 500 grams of chicken breast fillets

  • 2 tablespoons of olive oil

  • 2 tablespoons of tomato paste

  • 1 teaspoon of taco seasoning

  • 1 red onion

  • 1 red bell pepper

  • 1 green bell pepper

  • 1 yellow bell pepper

  • 1 teaspoon of cumin, ground

Steps


Step 1:

Put the chicken in a bowl, and add the olive oil, tomato paste, and taco seasoning

Step 2:

Put the bulgur in a bowl, add 1spoon of olive oil, salt, and boiling water, to 1cm above the bulgur, and cover for 20 min

Step 3:

In the meanwhile, cut the vegetables, put them in a bowl, and season with a bit of olive oil, fresh garlic, cumin, salt, and pepper

Step 4:

Now add the vegetable and marinated chicken to the Air Steam Basket, with the NutriU app connected to the Air Cooker you place the basket in, close the lid and the device starts with the indicated time, temperature, and humidity.

Step 5:

Prepping the sauce, greek yogurt, paprika powder, salt, garlic, lime juice, olive oil, cilantro, some spring onions, and some chili flakes   

Step 6:

Can just take a moment to appreciate how delicious that chicken looks, cut the chicken, and look at the juiciness

Serve the plate, add the black beans, sauce, and garnish as you like.
